Accra, Ghana – Tuesday, June 30, 2020,/ https://africanpostonline.com/ During covid-19 lockdown, we could not get our favourite pizza for a friend on her birthday. She loves pizza! We came up with the idea to learn the process of preparing pizza and thought of sharing what we have just added to our cookbook for the year. 

With pizza, you can always pick your toppings, and the finished product will surely be “awesome” and healthy. We made two batches of dough, four pizzas in all, with varied toppings. Now I can make pizzas and you can.

SPICY HOT PIZZA

Preparation time: 45 minutes

Special equipment needed:

A rolling pin

A pizza stone (or a clean table)

A pizza peel or a flat baking sheet

A pizza wheel for cutting the pizza or a knife

PIZZA INGREDIENT:

25g (10z) butter

2 onions, sliced

1 ready-made 25cm (10inch) pizza base

2-3 green chillies, deseeded and sliced lengthways

1 tablespoon chopped thyme, marjoram, ham, salami, 

50g (20z) of grated mozzarella cheese 

Marjoram sprigs to garnish

PIZZA DOUGH INGREDIENT: NB: You Can Choose To Buy The Already Made Dough In The Market

3 to 3 1\2 cups (750 to 875) flour 

1tablespoon olive oil (15ml) 

1\2 teaspoon (2.5ml) salt

1 1\2 tablespoon (22.5ml) sugar

1package yeast (12.8g cake or 7.5g dry) 

1 1\4 warm water

PREPARING THE PIZZA DOUGH: 

First, add salt, sugar, oil and nutmeg

Then mix one cake of compressed yeast with warm water

Next add the yeast mixture to the salt, sugar and oil

In the last step add flour to the mixture and stir until a stiff dough is formed 

Allow the dough to rise until the dough is double in size

Put down for two hours

TOMATO SAUCE INGREDIENTS:

1-2 tablespoon vegetable oil

1 garlic clove, crushed

2-3 shallots, chopped

250g (80z) tomatoes, finely chopped

150ml (1/4pint) dry white wine

1 teaspoon dried mixed Italian herbs

Salt and pepper

SERVES 4

PREPARING THE PIZZA:

First, make the tomato sauce

Heat the oil, add garlic and shallots to cook for 5 minutes

Add the tomatoes, wine and mixed herbs

Allow it to simmer over low heat for 20 minutes until thickened

Season to taste with salt and pepper 

Set aside to cool.

Melt the butter in a pan, add the onions and cook for 5 minutes until golden.

Set aside to cool.

Put the pizza base on to a hot baking sheet, spread the onions on the base and cover with the tomatoes sauce.

Sprinkle with the chillies, thyme, marjoram, ham, salami or any protein of your choice and cheese.

Bake in a preheated oven, 220°c (425°c)

Takes 15-20 minutes or according to the pizza base instructions.

Garnish with the marjoram sprigs and serve hot.

Serve with some white or red wine.
